Yummilicious!
You know when you come across a recipe that makes you physically SIGH when you eat it? Yup, this is that recipe. Well, it is for us anyway and the brilliant thing about it, there is next to NO WAY you can screw it up. Well, okay, maybe there is a way but trust me, this one is great.
What you will need:
- Canned Veggies (you could use fresh BUT this cuts down on the quick and easy factor. My friend used left over veggies in her taco soup and it was the first one I’d ever tasted. Fabulous! Just make sure you have a good mixture of veggies in the pot. Potatoes, carrots, celery, corn and peas are a must!)
- Pearl onions (Or use the veggies with onion already in them or onion powder if you have picky poos like me)
- Can of Black Beans
- Can of Red Kidney Beans
- Left over chicken (any sort just cut it into bite sized pieces) OR you can do Taco meat (which is browned beef seasoned with taco seasoning)
- Rotel
- Taco Seasoning (depends on the size of meal but you could use 2-4 packets)
- Chicken or Beef Broth (Whichever meat you decide to use)
And here is what you do:
- If you are using leftover chicken, I prefer to add this in at the end of cook time for max moisture retainage (yes it’s a word)
- If you are using ground beef I put it in at the beginning to help marry all the flavors.
- So, dump everything into a crockpot and mix well. You can taste the broth right now and see what you think, but remember as it cooks all the flavors are going to heighten and mix. So don’t over do it.
- Cook for 4-6 hours on low in the crock pot (depending on what type of veggies you have in there)
- When the flavors make you sing, it’s ready.
- Ladle into a bowl and top with cheese, sour cream, avocado and crunched up chips! You can use garish with a bit of cilantro and add fresh tomatoes to give it that extra UMPH.
Now, sit back and enjoy the beauty of the crockpot and good home cooked meals that make you sigh cuzz they are so easy and good!
